French Fridays-Vanilla Eclairs

Or, in this case, Vanilla Eclairs with Thick Ganache.


This recipe was actually fun to make.  It is 3 recipes in one but each recipe can be made independent of the others.  This suits my schedule very nicely.  I can concentrate on each recipe then once that is complete I don't have to rush into the next one.  My 8 month old DGD#2 doesn't believe that anything on the stove or in the oven is more important than she is!  And, well, neither do I! 

Dorie does a good job, as usual, in her preface to the recipe and recipe instructions.  There are so many "Bonnee Idee"'s with this one it was hard to chose which one I wanted!  Plain vanilla?  Chocolate and chocolate?  Coffee and chocolate?  Coffee and vanilla?  Coffee and coffee?  Vanilla and Chocolate?  Lemon curd?  Profiteroles?  And all the choices there are in that category! 

I have made a pate a choux before with some success.  It is an interesting technique.  Piping the dough is always fun!  This time I used a very sophisticated piping bag!




I decided to only make half this recipe.  I was able to get 7 full size (maybe a little larger) and 1 mini eclair.




I thought they looked very pretty!  This time I followed the recommended baking time.  I usually deduct a minute of 2 from baking times and lately have had mixed results.  I think I may need to get my oven calibrated.  Or a new fancy-pants oven would do quite nicely!


I was quite surprised when I sliced the eclairs in half, in preparation for the filling, and discovered how light they were.  Translation-holey!




Look at that!  More room for the filling!  And the filling!  Vanilla pastry cream!  yum!  Like the pudding your mom used to make on the stove!  Well, maybe YOUR mom did!  Mine was more of a from the box cook!  I admit I even briefly considered using the instant stuff! cause I'm lazy   I quickly dismissed those thoughts!  And I'm glad I did!   It was not hard to make the vanilla cream.   Even though I under-calculated the amount of milk and produced a ball of pudding.  Thankfully the addition of the missing milk and whisking the hell out of it alleviated that and created the desired (and delicious!) results.

In the past, I have had mixed success with the making of ganache.  This time the only problem I had was there was too much!  What to do with the extra?  Besides eat it out of the pan? 


I went with the spreading of the vanilla cream.  Because then I could lick the spoon!


This is my mini-eclair.  I originally thought I would only eat this one.

I was wrong.

Now my dilemma is which kind to make next?

Cute eclairs... I had too much ganache leftover too and ended up dipping the whole eclair as I was eating it!

there is nothing better than licking the spoon after this one. and, my mom was an instant pudding fan :).....I guess the FFWD members are rebelling against their youths!

Oh - all leftovers of the ganache and vanilla cream were reserved for the cook. I had a spoon in each hand...
Lovely job! (And I think you deserve a new fancy pants oven. Just because)

They turned out beautifully. I had quite a bit of pastry cream left over and am going to see if freezing it works out. I'm going to incorporate it into an cake icing, so I don't think anything too terrible will come of it.

I just finished by second batch... and while I could see myself substituting the instant chocolate pudding, that vanilla pastry cream is fan-freakin-tastic. Your eclairs came out super pretty and golden!

I've been very bad about keeping up with French Fridays and when I saw your eclair post I was so sorry I missed this one-I'm going to have to try it. Yours look fantastic, so good I want to make them now-eclairs have always been one of my favorite, very nice job

Oh my! Those look divine! I did not join FFWD as I can hardly keep up with CWF, but I will make this one. I have the cookbook, just not the time to be a member. :)
