This week the chosen recipe was Quinoa, Fruit and Nut Salad.
Ever had quinoa? You should! It's a nutritious grain. Really nutritious. Don't take my word for it, ask your mom!
And everything else in this salad was nutritious too! Really!
And tasty! Really!
And easy! REALLY!!
You know I like EASY!
I cooked the quinoa in chicken broth. I always do. I just do. Rice too. whatever.
I used golden raisins, craisins, sunflower seeds, sliced almonds, walnuts and pistachios. I wanted to use pumpkin seeds but couldn't find any. Funny because there usually is an abundance of them!
I topped it with a dollop of Greek yogurt cause that's what I had in the frig.
I served it alongside a baked chicken breast. It can be served alone. It is that hearty. It really is. Really!
I had a bowl of it for lunch the next day, even better, really!
I served it with salmon the next night.
My taste tester loved it. So did I. Really!
I will make this again and again!

You are too funny- I was chuckling with each crossed out comment :) And relating to you. This was the first time Nana and I tried quinoa and while she may not come back for a return trip - we definitely enjoyed the dish in my house. I loved the addition of Greek yogurt (even though I had to go GET some:) and am so sold on what an easy dish this will be for brown bag lunches. Yay !

I never thought to cook the quinoa in chicken broth,, but will try it the next time. I loved the flexibility of this recipe.
